Red Potato Salad

Red Potatoes, chopped - 2 1/2 lbs
Cider Vinegar - 3 Tbsp
Mayonnaise - 3/4 Cup
Yellow Mustard Powder - 1 tsp
Chopped Parsley - 1/4 Cup
Garlic, Minced - 1/2 Tbsp
Red Onion, Diced - 1/2 Cup
Dill Pickles, Minced - 3 Tbsp
Kosher Salt - 1 tsp
Black Pepper, freshly ground - 1/2 tsp

Instructions

Put potatoes into a large heavy-bottomed pot. Cover with cold water, cover the post and bring to a boil on high heat. Remove lid and reduce heat and gently simmer the potatoes for 15 - 20 minutes or until fork tender. Drain and place potatoes in an ice bath to cool.

In a large mixing bowl, combine the mayonnaise, mustard, parsley, garlic, pickles, and onions. Once evenly combined, add the potatoes and season with salt and pepper. Let the salad chill in the refrigerator for at least an hour before serving.
